1、脉冲强光处理对菜籽油品质的影响 周婷婷 曹少谦 李丝丝 戚向阳 * (浙江万里学院生物与环境学院,浙江 宁波 315100) 摘要: 为探索脉冲强光 (IPL)处理对 富含油脂食品 的影响,采用能量 为 500 J 的 IPL 对菜籽油进行照射,研究 IPL 处理对储藏过程中菜籽油氧化稳定性及相关成分的影响。结果表明, IPL处理可诱导菜籽油的氧化,增加总酚含量,降低 -生育酚含量 ,但其主要不饱和脂肪酸含量变化不明显 (P0.05)。 IPL 处理组和对照组菜籽油储藏过程中的氧化程度均随时间的延长而增加,但处理组菜籽油过氧化值 (POV)和 p-茴香胺值 (p-AV)的变化比对照组 缓 慢。
2、储藏 32 d 后, 处理组菜籽油 POV值、 p-AV 值和主要不饱和脂肪酸含量均显著低于对照组 (P0.05);储藏24 d 后,处理组菜籽油 POV值显著低于对照组 (P0.05);但储藏 32 d 后,处理组不饱 和脂肪酸含量显著低于照组 (P0.05)。 IPL 处理使菜籽油随着储藏时间的延长对 -生育酚含量的降低有一定延缓作用。 020406080*对照组处理组32d0d-生育酚含量(g/g)图 6 IPL 处理对 储藏前后 菜籽油 中 -生育酚 含量的影响 3 讨论 由试验结果可知, IPL 刚处理完时 (0 d)的 菜籽油 与对照组相比, POV值和 p-AV 值 均增大,并
3、达显著水平 (P0.05),说明不饱和脂肪酸的氧化在刚处理完时仍处于诱导期,大部分不饱和脂肪酸还未反应。储藏 32 d后,处理组菜籽油中不饱和脂肪酸含量显著低于对照组 (P0.05).
